BETTY'S PERSIMMON PUDDING 
1 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. sugar
1/2 c. raisins
1/2 c. chopped nuts
1 c. persimmon pulp
1 tsp. vanilla

Sift the flour, measure, then sift again with soda, salt, cinnamon and sugar into mixing bowl. Add raisins and nuts; mix lightly. Stir in persimmon pulp and vanilla, mixing just until dry ingredients are moistened. Turn into greased, floured 8 inch square baking pan. Set in shallow pan of hot water and bake at 350 degrees for 1 hour or until golden brown. Serves 6.
