OLD FASHIONED RICE PUDDING 
2 1/2 c. cooked rice (1 c. dry rice, 2 c. water)
1 1/2 c. evaporated milk
2/3 c. sugar
3 tbsp. soft butter
2 tsp. vanilla
1/2 tsp. nutmeg
3 eggs, beaten
1/2 c. raisins

Thoroughly combine rice with all remaining ingredients. Pour into lightly greased baking dish. Cook for 1 hour at 350°F. Must stir after first 30 minutes.

This was pretty good. Great flavor. I added cinnamon and a tiny bit of ginger and salt. I had no raisins, so I used dried blueberries. It was a bit dense for me. Also, I would cut the butter down as it left my lips feeling greasy. It came out of the pan easily, and held its shape. Nice warm with milk.

I wanted to update my earlier review. The flavor continued to improve. I think the best way to enjoy this is put cut squares in microwave until heated (35 to 40 seconds), then into broiler or toaster oven to crisp top and edges till sizzling. Smells irresistible! Serve individual squares in bowls. Pour light cream over top. YUM!
