OLD-FASHIONED RICE PUDDING 
2 eggs, well beaten
1 1/3 cups milk
1/4 cup sugar
1 tbsp. butter, softened
1 tsp. vanilla extract
1/8 tsp. salt
2 cups cooked rice
1/3 cup raisins
1/2 tsp. grated lemon rind
1 tsp. lemon juice

TOPPING:

3 tbsp. soft bread crumbs
1 tbsp. butter, melted

Preheat oven to 325°F.

Combine first 6 ingredients, mixing well. Stir in rice, raisins, lemon rind and juice. Spoon into a lightly greased 1-quart baking dish.

Combine bread crumbs and butter; sprinkle bread crumbs over top.

Bake at 325°F for 40 to 45 minutes or until set.

Makes 4 to 6 servings.
