OLD FASHION RICE PUDDING 
3/4 c. grain rice
1 1/2 c. water
2 eggs
2 c. milk
1/2 tsp. vanilla
1/2 tsp. nutmeg
1/3 c. sugar
1/4 tsp. salt
2 tbsp. butter, melted and cooled

Wash rice and drain. Put rice into saucepan with water. Bring to a boil. Cover, reduce heat and simmer until rice is tender and water is absorbed. Cool slightly.

In a bowl, beat eggs, then add milk, sugar, nutmeg, salt and vanilla. Stir in rice and butter. Turn into a buttered 9-inch round baking dish. Place pan in hot water that comes halfway up sides. Bake at 325 degrees for 45 minutes. Stir halfway through baking. Serve warm. Add additional nutmeg. Serves 6.

This recipe is yummy! It comes so close to the rice pudding my mom makes. This pudding is very creamy and tastes delicious. I actually added a dash of ground cinnamon and used rice milk instead of whole milk - I had to cook it longer than the recommended time, but it was great!
