FINNISH APPLE CAKE 
1/4 c. butter
1 c. sugar
2 lg. eggs
2 c. sifted flour
1-1/2 tsp. baking powder
Dash of salt
3/4 c. light cream or sour cream
2 apples, peeled, cored & sliced
2 tbsp. sugar mixed w/1 tsp. cinnamon

Cream butter and sugar until fluffy. Add eggs, one at a time. Add sifted dry ingredients alternately with cream or sour cream. Mix well and pour into well greased 9 x 12 inch pan. Insert apple slices in rows so rounded edge stands upright in batter. Sprinkle evenly with cinnamon and sugar. Bake at 350 degrees about 35 minutes.
