LAURIE'S BEST EVER DARK
CHOCOLATE CAKE
 
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup dark cocoa powder
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp. vanilla
1 cup boiling water

Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

Stir together the first 6 ingredients in a large bowl. Add eggs, milk, oil and vanilla and beat at medium speed for 2 minutes. Stir in boiling water. Batter will be thin. Pour batter into prepared pans.

Bake at 350°F for 30 to 35 minutes then allow to cool.

FROSTING:

1/2 cup (1 stick) butter
2/3 cup dark cocoa powder
3 cups powdered sugar
1/3 cup milk
1 tsp. vanilla

Melt butter. Stir in cocoa. Add sugar and milk a little at a time while beating at medium speed. Add vanilla. Beat until spreadable. Add additional milk if needed.

Frost between layers, top and sides of cooled cake.

Makes 1 (two layer) cake.
