NEVER - FAIL SCRATCH DARK
CHOCOLATE CAKE
 
2 c. sugar
1 3/4 c. all-purpose flour
3/4 c. Hershey's cocoa
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 c. milk
1/2 c. vegetable oil
2 tsp. vanilla extract
1 c. boiling water

Heat oven to 350 degrees. Grease and flour two 9 inch round baking pans or one 13 x 9 x 2 inch pan. In large mixer bowl combine dry ingredients. Add eggs, milk, oil and vanilla, beat on medium speed 2 minutes. Remove from mixer; stir in boiling water (batter will be thin). Pour into prepared pans. Bake 30-35 minutes for round pans. 35-40 minutes for rectangular pan. Frost as desired, after cooling completely.

Two words: Chocolate Heaven. Since my daughter is allergic to eggs I replaced 1 egg with 2 tbsp. flour, 1/2 tbsp. butter, 1/2 tsp. baking powder and 2 tsp. water.

Absolutely amazing! I almost never bake from scratch anymore being that I just had a baby recently, I was scared this wasn't going to turn out well, however this recipe is super easy to follow and absolutely delicious. It's very moist and I would definitely recommend it! Delish!!!

I needed a "never fail" cake recipe as I had volunteered to make the cake for my niece's birthday, and hadn't had much luck with cake baking in the past. This recipe was a resounding success, with everyone amazed at how moist and chocolaty the cake turned out (especially my husband who had been witness to rather dismal past efforts). Really good, and I dare say idiot proof! I was nervous to add the boiling water but it all worked out perfectly!
