FINNISH APPLE MERINGUE 
2 tbsp. butter
1/2 c. firmly packed brown sugar, divided
2 tsp. cinnamon, divided
2 cans pie-sliced apples or 8 tart apples
3 egg whites
1/2 c. sugar or 3/4 c sugar with fresh apples
Few grains salt

Melt butter in bottom of shallow 1 1/2 quart baking dish, 9x12 inches.

Sprinkle with half the brown sugar and cinnamon. Arrange apple slices evenly in pan. Sprinkle with remaining brown sugar and cinnamon. Beat egg whites until foamy. Slowly beat in sugar and salt. Continue beating until mixture stands in stiff peaks. Swirl on top of apples. Bake at 325 degrees for 35-40 minutes or until meringue is golden. Serves 8.
