ZUCCHINI LOAF 
1 1/2 c. all purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/4 tsp. baking powder
1 egg
1 c. sugar
1 c. finely shredded unpeeled zucchini
1/4 c. cooking oil
1/4 c. milk
1/2 c. chopped walnuts and powdered sugar

In small mixing bowl, stir together the flour, cinnamon, baking soda, salt, nutmeg, and baking powder; set aside. In medium mixing bowl beat the egg, add sugar and zucchini; beat well. Add oil and milk; mix well. Stir flour mixture into zucchini mixture. Gently fold in nuts. Turn batter into prepared pan.

To bake: Bake uncovered in a 350 degree oven for 55-60 minutes or until done. Cool 10 minutes. Remove from pan before serving. Sift powdered sugar atop loaf if you wish.
