ORANGE - SCENTED ZUCCHINI LOAF 
3 eggs
1/2 c. salad oil
1 c. sugar
2 c. all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
Pinch of nutmeg
2 c. finely shredded zucchini
2 tsp. grated orange zest
1/2 c. golden raisins
1/2 c. chopped walnuts

GLAZE:

1/3 c. sifted powdered sugar
2-3 tbsp. freshly squeezed orange juice

In a large bowl beat eggs well. Add oil and sugar. Beat until light and fluffy. Combine the remaining dry ingredients and blend carefully into creamed mixture. Add zucchini, orange zest, raisins and walnuts, mixing well. Spoon into a large, greased loaf pan and bake at 325 degrees about 1 hour or until it tests done. Cool bread slightly and remove from pan and place onto rack. Mix glaze ingredients and carefully spoon over top of loaf.
