GREEN TOMATO PICKLES 
1 gallon sliced green tomatoes
3 med. to lg. onions, sliced
1 pt. diced hot green peppers
1 c. red sweet peppers
1/4 c. salt
1 qt. vinegar
3 c. sugar
1 tbsp. dill seed
1 stick cinnamon, crushed
1 tbsp. pickling spices, mixed

Mix all ingredients in a large pan and place on burner. Let boil until tomatoes change color, put in jars and seal. Do not overcook.

I think these pickles are going to be great once they've been refrigerated. I ran out of liquid and ate some of the warm ones that were still in the pot and they tasted great. I think after they have been refridgerated and sat in jars for awhile that they will be great! I changed the recipe a little but I really appreciate that I found one where I didn't have to let them soak for 24 hours and then work on them again because I've been working with them long enough. Thank you!
