ZUCCHINI LOAF BREAD I 
3 eggs
2 c. sugar
2 c. grated zucchini
1 c. vegetable oil
2 1/2 c. flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
2 tsp. vanilla
1 c. chopped nuts

Beat eggs lightly. Beat in sugar, then add oil. Mix well. Add dry ingredients and vanilla. Alternate with zucchini and mix, pour into 2 greased and floured loaf pans. Bake about 45 minutes at 350 degrees. Remove from pans on racks to cool.
