ZUCCHINI BREAD 
3 c. flour
2 c. sugar
3 eggs
1 c. oil
3 c. grated zucchini
3 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. baking powder
1 c. raisins or nuts (optional)

Preheat oven to 350 degrees. Mix sugar, eggs, oil, vanilla, and zucchini together in large bowl. Combine all dry ingredients together in separate bowl (all except raisins or nuts). Add dry ingredients slowly to liquid mixture so as not to get flour lumps. Cut in raisins or nuts. Pour into 2 greased and floured bread pans. Bake at 350 degrees for 50 to 55 minutes or until it passes the toothpick test.
