ZUCCHINI BREAD 
3 eggs
1 c. oil
1 1/2 c. sugar
2 c. grated zucchini (peeled & scooped out)
3 tsp. vanilla
1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 c. flour
1/2 c. chopped nuts

Beat eggs light and fluffy. Add oil, sugar, zucchini and vanilla, sift dry ingredients together and add to above mixture. Bake at 325 degrees for 1 hour. Put mixture in two bread pans that are well greased.
