ROLLING R ZUCCHINI BREAD 
3 c. flour
1 tsp. salt
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
3 eggs
1 c. oil
1/2 c. sour cream
1 tsp. vanilla
2 packed full c. grated zucchini
1 c. raisins and/or chopped nuts

In a large bowl, combine first 6 ingredients. Add eggs and oil to flour mixture. Stir sour cream and vanilla into batter. Press some of the excess water out of grated zucchini and stir into batter. Add raisins and/or nuts. Combine well. Pour into 2 greased loaf pans.

Bake in a preheated 350°F oven for 1 hour.
