ZUCCHINI BREAD 
3 eggs
2 c. zucchini (peeled and grated)
2 tsp. vanilla
4 tsp. salt
1 c. chopped nuts
1 c. oil
2 c. sugar
3 c. flour

Preheat oven to 375°F. Beat eggs until light and foamy, then add oil, sugar, zucchini, and vanilla mixing lightly. Add dry ingredients mixing well, then stir in nuts.

Bake 1 hour or until golden brown.
