SPICED ZUCCHINI BREAD 
3 eggs
1 cup vegetable oil
2 cups sugar
2 cups grated zucchini
2 tsp. vanilla
3 cups all-purpose flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. ground cloves
1 tsp. allspice

Beat eggs until light and foamy. Add vegetable oil, sugar, grated zucchini and vanilla. Mix lightly but blend well.

Mix together flour, salt, baking powder, baking soda and spices, mix lightly. Add dry ingredients to first mix, stirring to blend.

Pour into two greased and floured 9x5x3-inch loaf pans. Bake at 325°F for 60 minutes or until done.

Allow bread to cool 10 minutes before removing from pans. Turn out on wire rack and cool completely before serving. Enjoy!

Makes 2 loaves.
