PARMESAN BAKED RED SNAPPER 
3 tbsp. flour
3 tbsp. cornmeal
1/4 tsp. onion salt
1/8 tsp. pepper
2 tbsp. butter
1 lb. red snapper fillets, thawed
1/4 c. Parmesan cheese, grated

Combine flour, cornmeal and seasonings. Melt butter in shallow baking dish. Dredge snapper in flour mixture. Place snapper in baking dish, turning to cover with butter. Sprinkle with Parmesan cheese. Bake at 450 degrees for 8 to 10 minutes, or until snapper is flaky. Makes 4 servings.

This recipe needs a little more snap to it. More garlic or some cayenne would have helped. Or feel free to add more salt & pepper. I used panko instead of flour which really helped but ended up putting the dish under the broiler after 12 minutes.
