BAKED DEVILED RED SNAPPER 
2 lbs. red snapper filets
1/2 c. mayonnaise
1/2 c. sliced green onion
2 tbsp. lemon juice
1/2 tsp. Dijon mustard
1/4 tsp. curry powder
1/2 tsp. salt
1/2 tsp. dill
2 tbsp. dry bread crumbs
1/2 tsp. paprika

Rinse and pat fish dry. Combine mayonnaise and onions, lemon juice, mustard, and seasonings. Spread on both sides of fish and place in shallow baking dish. Mix crumbs and paprika and sprinkle over fish. Bake at 425 degrees for 35 to 45 minutes or until fish flakes with fork. Serves: 4 to 6.

I did these mods:

2 6-oz filets
1/4 c. mayo
Leek instead of onion.
1/2 tablespoon Dijon
1/2 teaspoon curry powder
No salt
Corn meal instead of bread crumbs

YUM! I served over a bed of stir-fried bok choy and a few halved cherry tomatoes! I'd skip the whole bread crumb/corn meal thing next time!
