BRUSSEL SPROUTS
2 c. brussel sprouts or 1 oz. pkg. frozen sprouts
2 tbsp. butter
1 clove garlic, minced
1/8 tsp. cracked whole black peppers
2 tbsp. grated Parmesan cheese

Halve any large sprouts. If using fresh brussel sprouts in a 1 quart casserole, add 2 tablespoons water. Cook on high 3-5 minutes or until tender. If using frozen sprouts, cook according to package directions. Let stand covered, while preparing garlic butter.

For Garlic Butter: In a microwave safe 1 cup measure, cook the butter, garlic and cracked peppers, uncovered on High 40 to 50 seconds or until butter is melted.

Drain sprouts. Drizzle garlic butter over sprouts and toss to coat. Sprinkle with Parmesan cheese. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Love this recipe just as it is, but for a crunchy brussels sprout, I like to prepare them as directed but before adding the Parmesan cheese spreading them out on a baking sheet and baking them in a 400°F oven for 15 to 20 minutes. Stirring as needed to keep them from burning. The "leaves" that fall off get good and crispy and are just yummy to sit and eat by the bowlful!
