SAMANTHA'S ZUCCHINI BREAD 
2 eggs
2 cups sugar
1/2 cup vegetable oil
1/4 tsp. balking powder
2 tsp. baking soda
1 tsp. salt
2 cups shredded zucchini
3-4 tsp. cinnamon*
3 tsp. vanilla
2 cups all-purpose flour
confectioners' sugar (for sprinkling)

Note: Use 3 teaspoons for a hint of cinnamon or 4 for a good sweet taste.

Preheat oven to 350°F. Prepare two loaf pans (1 large, 1 small) with non-stick cooking spray (Pam or Baker's Joy).

Mix eggs, sugar and oil in a large bowl with beater. Mix until creamy smooth (1 to 2 minutes). Add baking powder, baking soda, salt, shredded zucchini, cinnamon and vanilla. Start mixing all-together then gradually add flour to the mix. Beat until well mixed. Pour into prepared loaf pans.

Bake at 350°F for 50 to 60 minutes. After they cool sprinkle some confectioners' sugar over the entire top of each loaf and enjoy!!!

Makes 1 large and 1 small loaf.
