ZUCCHINI BREAD 
3 cups sugar
3 cups zucchini
1 1/2 cups vegetable oil
4 eggs
3 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 cup chopped nuts

Mix sugar, zucchini, oil and eggs together. Add flour, baking powder, baking soda, cinnamon, salt and chopped nuts. Pour into greased and floured loaf pan.

Bake at 350°F for 1 to 1 1/2 hours.
