POLISH NOODLES & CABBAGE &
KIELBASA
 
1 medium head cabbage
1 cup minced onion
1/2 cup butter
1 tbsp. caraway seeds
1/2 tsp. salt
1/8 tsp. black pepper
1 (16 oz.) pkg. egg noodles

Wash cabbage, remove outer leaves and slice into thin slices.

In a large skillet melt butter. Sauté onion until transparent. Add cabbage, caraway seeds, salt, pepper.

Sauté until cabbage is tender. Cook noodles and drain. Turn into serving dish.

Add cabbage mixture and toss well. Add cooked kielbasa ring, cut into slices.

This recipe sounds like one that came from my grandmother whose mother came from Poland. The only things I add are bacon drippings, bacon bits, and, believe it or not, 1 small can of drained sauerkraut. Also, to keep it moist, I add a bit of chicken or beef stock. My family just loves this. I do use a large onion because it gives more flavor. Lots of pepper and salt to taste. No need for the kielbasa; I save that for another meal.
