BANANA COFFEE BREAD 
1/2 c. shortening (butter)
1 c. sugar
2 eggs
3/4 c. mashed ripe bananas
1 1/4 c. sifted all purpose flour
3/4 tsp. baking soda
1/2 tsp. salt

Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each egg. Stir in bananas. Sift together dry ingredients, add to banana mixture. Mix well. Pour into greased 9 x 9 x 2 inch pan. Bake at 350 degrees for 30-35 minutes.

This is a favorite due to ease of preparing, and ability of kids to eat easily given the lack of nuts. Unlike some recipes, I prefer this one with shortening rather than butter.
