BANANA COFFEE BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed ripe bananas
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt

Cream shortening, sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in banana. Sift together dry ingredients, add to banana mixture, mix well. Pour into greased 9 x 9 x 2 inch pan. Bake in 350 degree oven for 30 to 35 minutes.
