BANANA COFFEE BREAD 
1/2 c. shortening
1-1/4 c. flour, sifted
1 c. sugar
3/4 tsp. baking soda
3/4 c. mashed banana (about 2-3)
1/2 tsp. Salt

Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in banana. Mix together dry ingredients and add to banana mixture. Mix well. Pour into a greased 9 by 9 in. pan.

Bake at 350°F for 30 to 35 min.
