ZUCCHINI BREAD 
1 c. salad oil
4 eggs
2 c. sugar
2 c. zucchini, grated
1 tsp. vanilla
3 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 c. chopped nuts
1 c. halved raisins

Beat eggs until frothy. Add sugar gradually and beat well. Add oil gradually to blend. Add vanilla. Combine dry ingredients and add alternately with zucchini to egg mixture. Add raisins and nuts. Pour into 2 greased and floured bread pans. Bake in 350 degree F. oven about 55 minutes.
