ZUCCHINI HONEY BREAD | |
3 eggs 1 c. honey 2 tsp. vanilla 1 c. cooking oil 1 tsp. salt 1/4 tsp. baking powder 1 tsp. baking soda 3 1/2 tsp. cinnamon 2 c. whole wheat flour 1/4 c. raw wheat germ 1/4 c. bran 2 c. grated zucchini, unpeeled 3/4 - 1 1/2 c. chopped nuts as desired 1 c. raisins (opt.) Beat eggs and honey together; stir in vanilla and oil. Combine dry ingredients and add to first mixture, beating well. Stir in zucchini, nuts and raisins. Pour 2 greased loaf pans and bake at 325 degrees for 60 to 70 minutes. Cool before serving. This bread freezes well. |
