ZUCCHINI BISQUICK BAKE 
1 c. Bisquick
1/2 c. chopped onion
1/2 c. Parmesan cheese
2 tbsp. parsley
1/2 tsp. salt
1/2 tsp. oregano
1/2 c. vegetable oil
4 eggs
3 c. unpeeled zucchini

Combine all ingredients and place in greased loaf pan. Bake at 350 degrees for 35-45 minutes or until top is golden brown.

I made this zucchini bake today for dinner and it was absolutely delicious and moist. I am so glad I came across this recipe everyone in my family really enjoyed this dish and it is definitely a recipe I will keep in my archives and use again and again. The only thing I did different was added a 1/2 cup of fresh diced tomatoes. Thanks for the recipe.

I have been making this for years and everyone loves it. I do change a couple of things. I saute the onion and add 1-2 cloves minced garlic to that. I add 1/2 cup grated cheddar to bowl and use zucchini 2 ways and more than they suggest some I make thin round slices the rest I grate. Then just enjoy the results.
