GRILLED SALMON FILETS WITH GREEN
SAUCE
 
6 salmon steaks (bones intact)
1/2 c. virgin olive oil
1/4 c. chopped dill

GREEN SAUCE:

1/2 c. olive oil
3 tbsp. wine vinegar
1 tbsp. imported mustard
1 clove garlic
1/2 c. Italian parsley
1/2 c. scallions
1/4 c. chopped chives
1/4 c. fresh dill

SALMON FILETS: Arrange filets on broiler pan evenly. Brush olive oil over each filet. Sprinkle chopped dill over each filet. Lightly salt and pepper to taste. Broil for approximately 5 minutes, check to see if pieces are cooked through. Serve with Green Sauce. Yum!

GREEN SAUCE: Blend all ingredients in food processor or blender until herbs are finely chopped. Do not overblend, as mixture should have texture. Serve with salmon filets.
