ZUCCHINI HONEY BREAD | |
3 eggs 2 c. honey 3 tsp. vanilla 2 c. unpeeled shredded zucchini 3 c. flour 1/4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 3 tsp. cinnamon 1 c. chopped nuts; optional 1 c. raisins; optional Beat eggs until fluffy; add honey, vanilla, and zucchini. Combine dry ingredients; add to creamed mixture. Fold in nuts and raisins. Bake in two greased loaf pan at 350 degrees for 1 hour until toothpick comes out clean. |
