ZUCCHINI HONEY NUT BREAD 
4 eggs
1 tsp. baking soda
3/4 c. honey
2 c. sugar
3 tsp. cinnamon
2 c. grated zucchini
2 tsp. vanilla
1 c. oil
1 tsp. baking powder
3 c. flour
1 tsp. salt
1 1/2 c. chopped nuts

1. Beat eggs until light and fluffy. Add oil, sugar, grated zucchini, vanilla and honey; mix well.

2. Add sifted dry ingredients to zucchini mixture and mix well.

3. Fold in nuts. Divide mixture into two greased 9 x 5 inch loaf pans. Bake at 325 degrees for 1 hour.
