ZUCCHINI HONEY BREAD 
3 c. all-purpose flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tbsp. cinnamon
1 c. chopped nuts
2 c. zucchini, shredded
2 eggs, slightly beaten
1 1/2 c. sugar
3/4 c. honey
1 c. oil
2 tsp. vanilla

Combine flour, salt, soda, baking powder and cinnamon. Stir in nuts. Combine zucchini and rest of the ingredients. Add to flour mixture stirring just until dry ingredients are moistened. Spoon batter into 2 greased and floured 4x5 loaf pans.

Bake at 350°F for about 1 hour or until toothpick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and let cool on wire racks.
