Bonanza Bread

 JaiB (Illinois) says:
This is the best "banana" bread I've ever made. I found the recipe back in 1977 from an old magazine but some of the measurements had worn off. Adding a small orange, with peel to the liquid ingredients in the blender before mixing with the dry ingredients gives a pronounced citrus flavor. Recipe states combining dry ingredients and raisins in a large bowl and then adding combined wet ingredients. In a blender, swirl eggs until foamy, adding remaining wet ingredients one at a time, blending well after each. Then fold in fruit and chopped apricots before adding to dry ingredients. Pour into two oiled loaf pans. Tastes best the next day and really good served with cream cheese. You can also bake in a muffin pan for quick individual servings.
