CALAMONDIN NUT BREAD | |
1 c. calamondin puree 1 c. chopped walnuts 1 1/2 c. sugar 2 eggs 1/2 c. milk 3 tbsp. oil 1 tsp. salt 2 1/2 c. flour 3 1/2 tsp. baking powder 1/4 c. raisins 1/4 tsp. cloves 1/4 tsp. ginger 1/2 tsp. cinnamon Process about 12 large calamondins in the blender; use peel and pulp but remove seeds. Place 1 cup of this puree in large (4 quart size) mixer bowl. Add next 6 ingredients and mix until well blended. Add rest of ingredients and mix about 1 minute. Mixer will chop up the raisins. Pour into greased 9 x 5 x 3 inch loaf pan and bake at 350 degrees for about 1 hour and 15 minutes until it tests done; it is done when an inserted toothpick is removed with no batter adhering to it. Cool in the pan about 10 minutes and then turn it out onto a cooking rack. |
