SNACK BREAD - PUMPKIN LOAF | |
For a welcome change of pace, snack on a slice of this rich and spicy pumpkin bread. Moist and cake-like, it's loaded with nuts and raisins. 1 c. brown sugar, firmly packed 2 eggs, beaten 1/2 c. vegetable oil 1 c. pumpkin puree 1 1/2 c. all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 1 tsp. cinnamon 1/4 tsp. allspice 1/2 tsp. nutmeg 1/2 c. raisins 1/2 c. walnuts, chopped 1. Heat oven to 350 degrees. 2. In a large bowl beat together eggs, oil and pumpkin until well mixed. 3. In a medium bowl mix together remaining ingredients. 4. Fold into pumpkin mixture. Mix just enough to combine. Do not over mix. Pour into a greased 9 x 5 inch loaf pan. 5. Bake 50 to 60 minutes or until a cake tester comes out clean. 6. Let bread cool on a rack for at least 15 minutes before removing from pan. Serve. Makes 1 loaf. |
