ICE BOX FRUIT CAKE 
12 oz. pkg. vanilla wafers, chopped fine
1 can Eagle Brand milk
1 c. red candied cherries, diced
1 c. green candied cherries, diced
1 can angel flake coconut
1 1/2 c. pecans, chopped
1 c. English walnuts, chopped

Mix vanilla wafers that have been chopped fine with cherries, coconut, nuts in mixing bowl. Pour can of Eagle Brand milk on top and mix together. You may have to mix with hands. Then shape in rolls about 1 1/2 inches in diameter. Wrap rolls in wax paper or foil. Keep in refrigerator and slice as wanted.

Mom's traditional ice box fruitcake. I remembered her making this every year....and I helped. I would gather pecans rather than walnuts, crack and shell. She also used mixed candied fruit with pineapple. She made around 50 pounds a year, 1 pound gifts wrapped in foil, and enough to enjoy until the next year.
