BROCCOLI-SPINACH QUICHE 
1 c. shredded Swiss or other cheese (your choice)
1/3 c. chopped onion
8 eggs
2 c. half and half or milk
3/4 tsp. pepper
1/8 tsp. cayenne red pepper
1 pkg. spinach and chopped broccoli
2 prepared pie crust

Set crust up in pie plate. Sprinkle cheese and onion onto bottom. Spread out broccoli and spinach next. Beat eggs slightly and add in other ingredients. Pour egg mixture into pie plate. Cook uncovered in 425 degree oven for 15 minutes. Reduce heat to 300 degrees and cook for about 30 minutes or until knife inserted comes out clean.

Other Optional ingredients: lump crabmeat, mushrooms, tomatoes, sausage, bacon.
