PINEAPPLE CHEESE DESSERT 
15 oz. part skimmed ricotta cheese
Juice of 1/2 a lemon
1 can (lg.) pineapple, crushed, in its own juice
3 pkg. sugar substitute
1 tsp. vanilla
1 egg
1 pkg. unflavored gelatin
Cinnamon

Mix together egg, vanilla, sugar substitute and lemon juice until smooth. Add cheese, mix until smooth. Drain pineapple juice into a glass and add crushed pineapple to the mixture and mix until smooth. Mix gelatin with pineapple juice and add to the mixture. Mix until smooth. Put into a pie plate and sprinkle with cinnamon. Bake at 350 degrees for 45-50 minutes. Cool for 4 hours and then refrigerate.
