PINEAPPLE CHEESE SALAD/DESSERT 
2 env. unflavored gelatin
1/2 c. cold water
2 1/2 c. (16 oz. can) crushed pineapple
3 tbsp. lemon juice
1/2 c. granulated sugar
1 (8 oz.) carton whipped cream
1 c. Cheddar cheese, shredded
1/2 c. walnuts, chopped

Soften the gelatin in cold water. Heat the pineapple. Do not drain. Stir in softened gelatin until dissolved. Add the lemon juice and sugar. Chill until the mixture is partially set. Fold in the whipped cream, cheese and nuts. Pour into molds and chill until set.

I got this recipe from a friend over 30 years ago...she called it "Kraft Holiday Salad"... I have never seen it in print before. Just a note...the unsweetened WHIPPED cream is an 8 oz. carton of extra heavy whipping cream. This is Fantastic and well worth the effort!!! If it were lower calorie I would make AND eat it ALL the time. Enjoy! I forgot, hers had 1 cup of mayo added just before the whipped cream.
