CHICKEN CROQUETTES WITH GREEN
PEA SAUCE
 
3 tbsp. butter
1/4 c. flour
1/2 c. milk
1/2 c. chicken broth
1 tbsp. minced parsley
1 c. bread crumbs
2 tbsp. water
1 egg, beaten
1 tsp. lemon juice
1 tsp. onion juice
Dash of paprika, pepper & nutmeg
1/4 tsp. salt
1 1/2 c. chicken, diced & cooked

Melt butter, blend in flour, add milk and broth. Cook and stir until mixture boils. Cook 1 minute longer. Add parsley, lemon and onion juices and seasonings. Add chicken and salt to taste. With wet hands, shape into balls and chill. Roll in crumbs. Dip in egg and water mix. Roll in crumbs again. Fry in deep fat 2 1/2 to 3 minutes or until golden brown. Drain on paper towels.

GREEN PEA SAUCE: Melt 2 tablespoons butter, blend in 2 tablespoons flour. Add 1/2 cup light cream and 1/2 cup chicken broth. Cook and stir until mixture thickens and bubbles. Add 1/4 teaspoon salt and dash of pepper. Add 1/2 cup drained peas. Heat through. Spoon over croquettes just before serving.
