TOMATO - CUCUMBER & CHICKEN PEA
SALAD
 
2 tbsp. olive oil
2 tbsp. fresh lemon juice
1/4 c. chopped parsley
2 tbsp. chopped fresh onion & 1 tsp. dried
2 tbsp. oregano (or 1/4 tsp. dried)
1/4 tsp. salt
1/8 tsp. ground pepper
2 or 3 med. tomatoes
1 med. peeled & diced cucumber
1 can (19 oz.) chick peas, drained & rinsed
1/2 c. diced red onion

Blend in bowl first 7 ingredients. Then add vegetables and toss.
