BASIC CREPE RECIPE 
1 1/4 c. flour
Pinch of salt
2 tbsp. sugar
3 eggs
2 tbsp. butter, melted
1 tsp. lemon extract
1 1/2 c. milk

Combine above ingredients and prepare with crepe maker. Makes approximately 8. Let mixture set for at least 4 hours before making crepes.

FILLING FOR CREPE:

1 (8 oz.) pkg. cream cheese, softened
1 1/4 c. confectionery sugar
1 - 1 1/2 c. Cool Whip

Combine cream cheese and confectionery sugar, then fold in Cool Whip. Place filing in crepe and top with your favorite fresh fruit. I prefer strawberries.

Really good & quick recipe. I didn't wait the 4 hours on the batter and it turned out fine. Filling was a bit too sweet for my liking and I had cut down the whip cream to only one cup. Maybe less powdered sugar? Also it made a lot of filling to amount of crepe batter but that could be because I didn't want a lot of sweet flavor, but the kids seemed to love it!

Simple and easy to assemble. I made them before and cooked the next day. Stuffed with Vermont cheddar, provolone and honey baked ham. My very picky husband loved them and I devoured Three! Very yummy.
Keep the basic crepe recipe and change our your fillings.
