BASIC CREPES | |
1 1/2 c. all-purpose flour 1 tsp. sugar 1/8 tsp. salt 3 eggs, at room temperature 1 1/2 c. milk 2 tbsp. butter butter for cooking Sift flour, sugar, and salt together into a bowl. Add eggs and mix together thoroughly with a whisk - mixture will form a thick paste. Add milk gradually and slowly, beating thoroughly until you have air bubbles. Add melted and cooled butter. Add flavoring now if one is desired. Let batter stand for at least 1 hour until the air bubbles disappear. Makes about 16 crepes. FLAVORING FOR DESSERT CREPES: 1 tsp. lemon peel and 1 tsp. dried herbs OR 1 tsp. vanilla and 1 extra tbsp. sugar OR 1 tsp. grated lemon rind and 1 extra tbsp. sugar. Enjoy! |
