VEGETABLE PASTA SALAD 
2 cups elbow macaroni or tri-color rotini
1/2 cup diced celery
1/2 cup diced green peppers
1/2 cup shredded carrots
1/4 cup finely chopped onion
2/3 cup mayonnaise
1 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dry mustard
baby salad greens
1 cucumber
1 whole carrot
4 radishes

Cook pasta according to package directions (or until tender).

Combine with remaining ingredients except salad greens, cucumber, radishes and whole carrot. Toss lightly and refrigerate.

When ready to serve, spoon onto dish over baby salad greens. For special occasions, carve cucumber, carrots and radishes into rosettes and spirals for fancy garnishes, if desired.
