CUSTARD ZUCCHINI CASSEROLE 
4 eggs, beaten
1/2 c. vegetable oil
1 c. Bisquick
1 med. onion, chopped
1 clove garlic, minced
2 c. grated cheddar cheese, divided
4 c. coarsely chopped zucchini

Combine eggs, oil and Bisquick mix. Stir in onions, garlic and half the cheese. Stir in squash. Pour into a greased 13 x 9 x 2 inch baking dish. Bake at 350 degrees for 40 minutes. Sprinkle with reserved cheese and bake 5 minutes more.
