REUBEN SANDWICH FILLING 
1 (12 oz.) can corn beef, chopped
2 c. shredded Swiss cheese
1 (16 oz.) can sauerkraut, drained and snipped
3/4 c. mayonnaise or salad dressing
3 tbsp. chili sauce

Mix all of the above together. Spread on rye bread which has been buttered on the outside and grill until the cheese melts. This may be kept in the refrigerator for use when needed. Makes 5 cups, or enough for a crowd.

I tried this for the first time today, using corned beef I cooked previously in my pressure cooker and fresh, homemade sauerkraut my son shared with me. I followed the recipe closely for the filling but used it with tortillas to make Reuben quesadillas. They were great! My husband ate a big, burrito sized one and asked for seconds. I used low carb tortillas (Mama Lupe's) and loved that result, too.Except for the part I burned! I love Reubens to the point of craving them, and this really hit the spot in a way that previous recipes for Reuben casseroles did not. I call that an unqualified win. Add to it that I estimate one serving of this filling has only 3.5 grams of carbs, and I am one happy LC dieter. If you love Reubens, try this recipe. I think you will be pleased.
