HAM REUBEN SANDWICH 
A great way to use up the leftover holiday ham!

ham
sharp cheddar
sauerkraut
onion
thousand island dressing
stone-ground mustard
dark rye bread (or your preference)
butter (or favorite spread, Country Crock or similar will work fine)

In a non-stick skillet, sauté finely-diced onion until clear. Add ham to other side skillet to start warming. Add well-drained sauerkraut to the onion, and continue to sauté until slightly darkened.

Butter one side of a slice of bread, place in skillet butter-side down, and spread a liberal amount of mustard on other side. Add thin slice of cheddar to bread, and cover with half of the sauerkraut. Cover this with ham, then the remainder of the sauerkraut and top with remaining cheddar. Place second slice of bread in skillet, butter-side down, and spread a liberal amount of Thousand Island dressing on other side. Then flip second slice of bread to top sandwich, and brown sandwich on both sides until bread is well-toasted and cheese is well melted.

Serve with fries or chips and pickle garnish if desired.
