CRUMPETS (SORT OF A CROSS
BETWEEN A PANCAKE AND ENGLISH
MUFFIN)
 
pkg. active dry yeast
1 tsp. sugar
1/4 c. warm water
1/3 c. milk, room temperature
1 egg
4 tbsp. butter, melted
1 c. all purpose flour
1/2 tsp. salt

In large bowl combine first 3 ingredients. Let stand until bubbly (about 15 minutes). Blend in egg, milk and 1 tbsp. butter. Add flour and salt and beat until smooth. Cover and let stand in warm place until doubled about 45 minutes. Brush griddle and the inside of 3 inch ring with butter. Heat ring on griddle over low heat (325 degrees). Pour about 3 tbsp. batter into each ring. Bake about 7 minutes or until holes appear and tops are dry. Remove rings and flip to brown other side lightly. Serve warm with butter, syrup, preserves or favorite topping. Melted cheese also good.
