SOUR CREAM CUCUMBER SALAD 
4 med. sliced cucumbers, peeled if desired
1 tbsp. salt
1/2 tsp. white vinegar
3 hard-boiled eggs, peeled
1/3 c. sour cream
1 tsp. prepared mustard
1/2 tsp. sugar
1/8 tsp. black pepper
1 tbsp. parsley flakes, dill weed or chives

Toss cucumber slices lightly with salt and vinegar in a mixing bowl until cucumbers are well moistened. Marinate at room temperature for 30 minutes. Drain thoroughly and pat off excess moisture with paper towels. Cut eggs in half. Separate yolks from whites and rub egg yolks through a sieve. Cut whites into strips and add to cucumbers.

Slowly beat together sour cream, mustard, vinegar, sugar, pepper and egg yolks until mixture is smooth. Pour over cucumbers. Toss lightly. Refrigerate. Add your choice herb taste preference.
